Lentils are famous worldwide as they contain an abundance of protein and dietary fibers. Along with Korean kimchi, Japanese natto, Spanish olives, and Greek yogurt, they are considered one of the world’s most popular health foods. Although lentils are smaller than peas, they are packed with nutrients such as protein, minerals, vitamins, dietary fiber, and folic acid. Lentils are particularly rich in folic acid and known for being helpful to menopausal and pregnant women.

Lentils are divided into yellow, brown, black, and red varieties. Among these, red lentils are, in fact, brown lentils that have been polished and peeled, so they cook quickly and have a soft texture.
